Tasty Tofu Veggie Burgers
For 6 burgers you will need:
1lb firm tofu
2 tblsp tamari
1 tsp chopped garlic
1 tsp each dried oregano, basil
2 tblsp chopped fresh parsley
2 tblsp chopped red pepper (optional)
2 tblsp grated carrot
1 tblsp chopped scallions
½ cup bread crumbs
1 egg, beaten
½ cup olive oil
Salt & pepper
- Drain the tofu and mix all the ingredients, except the oils.
- Leave the mixture to sit at room temperature for 10 minutes and then shape into burgers, coat with extra breadcrumbs when shaped.
- Heat the oils together in a large pan and fry the cutlets on both sides until brown, drain on a paper towel.
